A Super Easy Winter Meal:
A loaded baked potato. Potatoes are a good source of vitamins C and B6, folate, and fiber (if you eat the skin). Top with favorites like broccoli and cheese. Or try creative combos like diced tomatoes and avocados; black beans and salsa; or caramelized onions and mushrooms.
1. Scrub potatoes under running water. Dry, rub skin with a little oil, and pierce several times with a fork.
2. Place potatoes on middle oven rack. Place baking sheet on bottom rack to collect drippings.
3. Bake at 375˚ F for 50 to 60 minutes or until tender.
4. Cut open potatoes and add toppings.
